The Great American State Fair’s menu was released this week, giving the public a taste of what Freedom 250’s 16-day festival on Washington, D.C.’s National Mall holds for them.

The event lineup is set to feature an array of local restaurants, a food challenge brought by sandwich shop Bub and Pop’s, and a sprinkle of Make America Healthy Again’s crusty outlook, with “MAHA Mondays” planned for June 29 and July 7. The free “World-fair” styled event, which seeks to celebrate 250 years of American independence, is launching on Thursday and will take place through July 10.

Programming on the “food-as-medicine” movement will highlight Judy’s Pancakes, a beverage demo by influencer “Holistic Hilda,” Polyface Farm’s Joel Salatin, Health and Human Services Secretary Robert F. Kennedy Jr. aide Calley Means, and Steak ‘n Shake’s “chief MAHA officer,” according to Axios

Fair-goers will have a variety of food vendors to choose from, including Mazz ‘a’ Mia’s and Juicys Famous Fair Food, which will serve up classic fair ranging from corn dogs and New York-style pizza to burgers, hot dogs, and popcorn. Local spots such as Lucky Buns burgers, Chop Shop sandwiches, and Get Baked Pretzels will also be serving up eats.

On June 29, MAHA Mondays will begin with an event featuring rancher and country artist Clare Dunn, fifth-generation rancher Shad Sullivan, and MAHA farmer John Klar.

Besides the array of food and wellness events, the fair will feature a towering 110-foot Ferris wheel, a refurbished Smithsonian carousel, and competitions such as quilting bee finals, as well as educational exhibits on agriculture, industry, and cultural heritage.

A rodeo will also be taking place daily, in what organizers have framed as a free educational experience, marking a departure from traditional events.

Attendees on the National Mall will see a variety of demonstrations and exhibitions telling “the evolution of the American cowboy,” from Spanish vaquero traditions to cattle drives, Wild West performances, trick riding, Roman riding, trick roping, precision riding demonstrations, traditional Mexican charro performances, liberty horse exhibitions, and the emergence of modern professional rodeo.
